What to Expect

Fermented products are exempt from some regulatory requirements – like 21 CFR 108.25 and 21 CFR 114. Instead, these products require a “product classification” conducted by a process authority. Upon completion, the manufacturer will receive a letter stating the product(s) classification. If applicable, a thermal process recommendation will be provided as well.
 

Steps

1. Once contacted, EFS will respond with a questionnaire to determine how to best assist a product.

2. A product information form will be delivered electronically through DocuSign.

3. EFS will request a product sample be shipped to our facility.

4. Our personnel will perform verification testing on the product's pH and/or water activity.

5. The Process Authorities will evaluate the product information, including test results, formulation, and other physical characteristics.

6. The product classification letter(s) will be issued to the manufacturer.
