Juices

What to Expect

Juice products are perishable foods (foods that must be stored and distributed at temperatures below 41F degrees) or nonperishable (shelf-stable) and regulated under 21 CFR 120. Common examples of refrigerated juices include chilled watermelon, orange, and blueberry juice. Juices can also be shelf-stable and sold in room-temperature distribution channels. Juice products need to be evaluated to determine which regulatory category applies. Certain juices are regulated as canned foods, others are not. Our Process Authorities will determine if an exemption letter or thermal process letter is needed.
