Application of analytical chemistry in food science using ‘omics’ technologies (metabolomics and flavoromics); establishment of analytical platforms for volatile and non-volatile metabolites (biomarkers) to support development and processing of food with enhanced flavor and product quality; discovery of flavor synthesis in fruits; evaluation of nut quality; development of consumer-preferred food products; dairy product quality and flavor.
