Fall 2024 Review

From the desk of Dr. Manpreet Singh,

As the fall semester wraps up and the Department of Food Science and Technology enthusiastically looks ahead to the start of the Spring 2025 semester, I want to look back at some of the exciting events and happenings that have occurred this fall. Our students are doing exciting things and excelling as always, and we have welcomed three new staff members to the department and the Center for Food Safety.

In October, the department hosted a surprise reception for Dr. Yaowen Huang and present him with a new scholarship fund in his honor: The Dr. Yaowen Huang Family Food Science and Technology Graduate Fellowship Fund. Our department is so proud of the accomplishments and dedication of Dr. Huang, and we were so thankful for the opportunity to present this scholarship in front of friends and family.

Search for safe seafood broth recipe in the works
Safe recipes for canning chicken and other meat stocks are plentiful, but when it comes to seafood, the options are limited. Currently there are no research-based, validated recipes for safely canning seafood broth at home, only recipes developed for taste and flavor. A team of University of Georgia scientists, in collaboration with colleagues from the University of Maryland and University of Maine, are conducting an exploratory study they hope will lead to validated seafood broth recipes for home canners.
